Two years ago, whilst having a spot of lunch in a restaurant facing onto Lake Como, I ate some pasta. Now, like many delicious dishes from the past, my memory has transformed that plate of pasta into a golden plate of uncomprehensible beauty. I thought that I would never be able to replicate it. However, yesterday I came close. Obviously it didn’t taste quite as good as the original; unfortunately my kitchen didn’t offer the same beautiful lake views and Tesco, obviously not the same quality of smoked salmon.
But anyway, I apologise for all of that rambling! Here is the recipe….
Serves 4
– One pot of creme fraiche
-One packet of smoked salmon
– Half a lemon
– 400g of spaghetti
– About three handfuls of peas (sorry, I have no idea of measurments!)
– A handful of grated parmesan
-Dill (optional)
-Salt and pepper
1. Whilst you cook the pasta mix together the parmesan, creme fraiche, lemon juice and smoked salmon. Season to taste
2. Three minutes before the pasta is cooked heat through the sauce
3. Mix the pasta and sauce together with some cooked peas. Sprinkle with dill.
